St. Patrick’s Day means watching “Far and Away” and cooking an Irish recipe. This vegan sweet potato pie is full of traditional flavors, packed with protein and it won’t break your Lenten fast. Make it with or without a crust and pair it with some cabbage for a traditional St. Patty’s meal, or anytime you want a healthy, satisfying dinner for your family.

Ingredients:
1 1/2 c. brown lentils rinsed
Optional*: 1 prepared pie crust
3 yams chopped
3 tbsp. olive oil
1 medium onion chopped
3 cloves garlic, chopped finely
3-4 carrots chopped
1 c. canned corn (drained)
1 c. fresh green peas
8 oz. chopped fresh mushrooms
2 tsp. kosher salt
1 tsp. dried thyme
3 c. vegetable stock.
1 can low sodium cream of mushroom soup
Pepper and other savory spices to taste.
Directions:
Preheat oven to 350.
If using; par bake prepared pie shell until slightly golden in color, set aside.
Cover lentils in water and allow to soak for 1 hour. Drain, rinse lentils well and set aside. Chop yams (sweet potatoes) into 2 inch chunks. Boil sweet potatoes until soft, mash and set aside.
Heat 2 tbsp. of the olive oil in saute pan or Dutch oven over medium heat. Saute onions, carrots and garlic until onions are translucent. Add garlic and thyme and cook until aromatic, about 1 minute. Stir in lentils and allow them to soak up the onion mixture about 5 minutes. Add vegetable stock and bring to a boil Cover, reduce heat and simmer on low for 20 – 25 min, stirring frequently.
Stir in soup, cover with lid and simmer for another 15 – 20 minutes until lentils are soft and creamy.
Fill a 9 x 13 casserole or large pie plate (with or without par baked crust, leaving a 1/2 inch on top. Place mashed sweet potatoes on top and spread an even layer to cover lentil mixture. Sprinkle with salt, pepper and a bit of thyme.
Bake for 1 hour, until filling is bubbling and sweet potatoes have a slight browning.
Serve with cabbage for St. Patrick’s Day or a healthy side salad.
