With temperatures soaring over 100 degrees all across the world this summer, staying hydrated is very important. This super simple salad includes three of the best things to eat to keep your cool. Both watermelon and cucumber are over 90% water and contain electrolytes you lose in the heat. Menthol in mint triggers cold-sensitive receptors in the skin, resulting in a cooling sensation that feels super fresh.

Ingredients:
1/2 small, seedless watermelon cut into 1 inch cubes
2-3 garden cucumbers or 5 Persian cucumbers cut into 1 inch cubes
2 tbsp. fresh mint, roughly chopped
3 tbsp. olive oil
3 tbsp. lime juice
3 tbsp. honey
1/4 c. crumbled feta
Directions:
Whisk together olive oil, honey and lime juice and set aside. Remove rind from watermelon and chop meat into 1 inch cubes. If using garden cucumbers lightly peel off outer skin, leaving a small amount of green, if using Persian keep the skin on. Chop cucumbers into cubes to match size of the watermelon chunks. Pick and clean 4 to 5 sprigs of fresh mint, remove stems and rough chop. Place melon, cucumber and mint into a large bowl. Sprinkle dressing over mixture and toss until combined. Crumble feta and fold into salad.
