Recipe: Oatmeal Chocolate Chip Cookies

National Chocolate Chip Day inspired this simple, healthier version of chocolate chip cookies. Sweetened with honey and dark chocolate chips this recipe uses whole grains with whole wheat flour and quick cook oats.

Ingredients:
1 c. quick cook oats
3/4 c. whole wheat flour
1 1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. kosher salt

2 tbsp. melted butter
1 tsp. vanilla
1 large egg
1/2 c. honey
3/4 c. dark chocolate chips


Instructions:

Preheat oven to 325. Line large baking sheet with parchment paper. In a large bowl, combine oats, flour, baking powder, cinnamon and salt.
Place melted butter in bowl of electric mixer. On medium speed mix in vanilla, then the egg. Add honey and mix on high until creamy. Turn mixer to low and slowly add in dry ingredients until combined. Add in chocolate chips on low until evenly distributed. Chill mixture in fridge for at least an hour.

Scoop cookies onto prepared sheet. Bake in preheated oven for 12 – 13 minutes or until cookies are just turning brown on the edges. Allow sheet to cool on rack for 5 minutes, then remove cookies to rack to cool completely.
