Recipe: No Bake Pumpkin Pie

Canadian Thanksgiving is the second Monday in October. Since It’s so close to Halloween I don’t like to fuss too much over it. All my Canadian Thanksgiving recipes have to be quick and EASY like this no bake pumpkin pie.

Ingredients
8 oz Cream Cheese room temperature/softened
15 oz Pumpkin Puree/Canned Pumpkin
2-3 Teaspoon Pumpkin Pie Spice
1/2 cup Splenda or 1 cup White Sugar
8 oz Cool Whip
1 Graham Cracker Crust

Directions:
Add cream cheese to stand mixer and beat until fluffy. Add pumpkin and mix until combined. Add spice and Splenda or sugar, mix until combined. Gently fold in Cool Whip until mixture is streak free. Pour mixture into prepared crust and spread evenly. Sprinkle a little spice on top. Refrigerate at least 1-2 hours before serving.
