Recipe: No Bake July Cheesecake

The first week of July includes Canada Day, Independence Day and my wedding anniversary; all great reasons for celebration. Since it’s too hot to bake a no bake dessert is the best way to go. This “cheater” cheesecake can be made completely sugar free by skipping the raspberry pie filling and low fat by choosing the right cream cheese. Enjoy!

Ingredients
8 oz Cream Cheese room temperature/softened
1 package of sugar free cheesecake pudding mix

15 oz Raspberry pie filling

1/2 cup fresh blueberries

1 pre-made Graham Cracker or Shortbread Crust

Directions:
Add cream cheese to stand mixer and beat until fluffy. Add pudding and mix until combined. Pour mixture into prepared crust and spread evenly. Place dollops of raspberry pie filling on top and gently swirl to create a pattern. Refrigerate at least 1-2 hours. Place fresh blueberries on top before serving.
