Recipe: Honey Zucchini Bread

Sweetened with honey this is a very basic recipe that yields two 8 x 4″ loaves of a tasty bread, great alone or used in a trifle or other summer dessert. I make one to enjoy right away and put the other in the freezer to enjoy during the holidays.

Ingredients
3 eggs
1 cup honey
1 cup vegetable oil
1 tablespoon vanilla
2 cups grated unpeeled zucchini
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1⁄2 teaspoons cinnamon
1 teaspoon ginger
1⁄2 teaspoon nutmeg
1 cup chopped walnuts or pecans

Directions:

Preheat oven to 375 degrees. Butter two 8 x 4 inch loaf pans.
Add flour, baking soda and baking powder together in a large bowl. Whisk in spices and set aside. Add oil, then honey to the bowl of your electric mixer. Add eggs one at a time and beat until blended. Add vanilla. Stir in drained zucchini and nuts. Add dry ingredients and mix until combined. Pour evenly into the prepared loaf pans. Bake for 40-50 minutes, or until a toothpick inserted comes out clean. Cool in pans on a rack for 15 minutes before turning out.
