A delicious and nutritious meal with a peanut dressing is easy to make using the meat from a Costco rotisserie chicken.

Ingredients for Salad:
2 cups shredded rotisserie chicken
3 cups prepared chopped salad of your choice (or napa cabbage)
2 cups shredded red cabbage
1/2 c. shredded carrots
1/4 c. chopped bell peppers
2 scallions sliced diagonally
2 fresh mandarin oranges
2 tbsp. chopped cilantro
Peanut Dressing:
1/3 c. smooth sugar free peanut butter
1/4 c. low sodium soy sauce
1 tsp. sesame oil
1/4 lite rice vinegar
2-3 tbsp. lime juice
1 tbsp. chopped garlic
1 tsp. minced ginger
2 tsp. honey
Instructions:
Whisk together dressing ingredients until smooth consistency. Funnel into a mason jar and set aside. Chop breast of rotisserie chicken. Place 2 cups into a bowl and toss with some of the peanut dressing and set aside.
In a large bowl add all chopped vegetables, reserving scallions, cilantro and peanuts. Add dressed chicken and toss salad until well mixed. Add cilantro and peanut derssing and gently toss again.
Top with peanuts and scallions and serve immediately.
